Halvah is soft, fudge-like candy made out of sesame paste and common in Middle Eastern markets. You will find them very easy to make. The key to cooking halvah is to cook sugar at the right temperature and not to over beat it. You will find that this recipe takes a time to allow the mixture to develop a crumbly texture. Nuts can be added for more texture.
